Cottage cheese is high in protein, with around 14g of protein per serving (sometimes more depending on brand). Large eggs have about 6.3g of protein each. One serving of cottage cheese eggs (two large eggs and a serving of cottage cheese) will have 26.6g (about 27g) of protein.

Which cottage cheese brand should I choose?

Good Culture Cottage Cheese is always my go-to. It is certified organic and made with whole milk from pasture-raised cows. It has 14g of protein per serving and is Keto Certified. This brand was used in the recipe and another of our high protein breakfast recipes.

There are many other good brands of cottage cheese to choose from such as Horizon Organic, Nancy’s, Green Valley Creamery, and many more. No matter the brand you choose, the best cottage cheese to look for are ones made from organic, high-quality milk with simple ingredients. Any of the former mentioned would work well with this recipe.

Notes on this recipe

You can season the cottage cheese eggs however you like. This recipe pairs well with cayenne pepper and Celtic Sea Salt. Other seasonings you can use are pepper, paprika, parsley, or oregano. Find more seasoning ideas here.

The amount of cottage cheese used in this recipe is based off of the recommended serving size of Good Culture Cottage Cheese. Other brands may suggest different serving sizes.

Other ways to use cottage cheese eggs

Some other great ways to use cottage cheese eggs include breakfast sandwiches. Simply making a breakfast sandwich with cottage cheese eggs instead of a fried egg or regular scrambled eggs is a tasty and fantastic way to add extra protein and nutrients.

It is delicious when used in omelettes. Combining the cottage cheese and eggs in a bowl and fluffing with a fork before adding it to your pan will give your omelettes a flavorful, rich taste. A recent favorite of mine has been a cottage cheese omelette made with mushrooms, spinach, and mozzarella cheese.

Cottage cheese eggs pair well with avocado toast. Adding it onto your avocado toast topped with your favorite seasonings is an excellent way to get all three macronutrients (protein, fat, and carbohydrates) in your breakfast.

This recipe is very flexible and can be added to many of your favorite breakfast recipes. Substituting cottage cheese eggs for regular scrambled eggs in any recipe will give you that flavor boost you’ve been looking for.

Cottage Cheese Eggs Recipe

Ingredients

2 Eggs– preferably pasture raised to get the most nutrients

1/2 cup cottage cheese– Good Culture Cottage Cheese or any other high-quality brand can be used

1 dash of cayenne pepper

1 dash of Celtic Sea Salt

Butter or Olive Oil– to prep the pan

Directions

Step 1: Pre-heat stove to medium-high heat. Prepare pan with butter or olive oil.

Step 2: Combine eggs and cottage cheese in a bowl. Fluff with fork in an upwards circular motion until ingredients are mixed together. The volume of the mixture should increase.

Note: The cottage cheese will be clumpy even after stirred. The clumps will go away once cooked.

Step 3: Pour mixture into pan. Add cayenne pepper and Celtic Sea Salt or other seasonings of choice. Stir continuously until the eggs are fully cooked. Reduce heat if needed. This should take around 5-8 minutes. The eggs should be fluffy and not runny once fully cooked.

Note: The cottage cheese will give off a watery substance when added to the pan. This should go away once the eggs are fully cooked.

Step 4: Turn off the stove, plate and enjoy. Add additional cayenne pepper and Celtic Sea Salt or other seasonings to taste.
